K Sabatier Jeune was an offshoot of the K Sabatier company that ran from the early 20th century to 1970. They are well loved for their high quality knives and I cannot argue with that reputation. Plus the grapes are pretty charming.
This knife has been sharpened in a little and has had the edge thinned a bit right behind the edge, it could be a little thinner but is not too thick to discourage use at all. One side saw a bit of rust leaving some shallow pits but all active rust is gone. The dense walnut like pear wood handle is free from cracks or heavy shrinking. Blade marks are gone but the grapes on handle are enough to ID it.
